Hi all! Hubby and I are going to Barcelona for 5 days so I haven’t had a grocery delivery this week. Tell a lie, I had a massive delivery of cat food and treats 🙂 but no real people food.
I am attempting to eat just what’s in the fridge/freezer before we go and have been pretty successful. I think in a previous life I lived through the depression, and like my granddad, my cupboards are always full, and the freezer, and usually the fridge. Anyway, I am at least doing a good job of emptying the fridge. So breakfast was overnight oats, the only thing I did differently was add 1 teaspoon of coconut manna to try it. Yummy!! So much better than coconut oil! I have a recipe to make which is why I bought it in the first place, but had to give it a try. I also substituted PB2 for cashew butter this time to save a bit of fat and calories. Tasted nice with my raspberry chia jam and I got slightly more peanut butter than I would normally get given that it was PB2. Win win.
I ran yesterday and the day after running I am usually pretty hungry so like clockwork at around 10 I was starvin marvin and had to make an egg white breakfast sandwich with raspberry jam on GF bread in the sandwich maker.
Of course I was starving again at lunch time given that I had put it off until late awaiting a conference call. So I quickly looked in the fridge and we have loads of eggs and some veggies. So I had some eggs with egg whites and grated zucchini on top with 2 T crumbled feta, and a drizzle of rapeseed oil. It doesn’t sound particularly appetising I know but it was really tasty.
I decided as exercise will not be a priority while I am away to get in another run today and it was so humid out. Whew. No speed records will be won for that one, but hey it’s over and I can have something decent for dinner. Nice grilled steak, grilled asparagus, and roasted kale and coconut. MMMMM
