Ok I know this is a shameless way to start my post. A cute sleeping cat. My cats are olympic sleepers, and Eli can crash with the best of them.
It’s been a long stressful week, to the point where you sleep for like 5 hours a night. My body doesn’t like it, and neither do my moods.
I am back to as clean eating as I can do, with the occasional glass of wine thrown in for good measure. To be fair, it is spritzer in a bottle so it’s only half wine and half sparkling water.
Dinner last night needed to be quick as the commute has gotten longer due to the crowds coming to London ahead of the Olympics and the heat. Yes folks, when it gets hot out (rarity) English trains grind to a halt.
So last night I opted for grilled salmon and crunchy kale.
Nothing fancy, and it’s the normal crunch kale and coconut I always make. Simple and delish!
Today I was determined but woke up feeling none too fresh after working so late, so I just made a smoothie;
Coconut & Banana Smoothie
250ml light coconut milk
1 banana frozen and cut up
1 heaped tsp chia seeds
2 heaped Tbsp unflavored protein powder (I used whey protein)
Whizz up in the blender and let sit a couple of minutes so the chia seeds can swell up.
Delish, quick and easy. My snack later was an apple in front of the computer.
I figured that I had better make a bit more effort with lunch and had read about cauliflower crust pizza, so I decided to make one up to try.
Cauliflower crust pizza
1.5 cups grated cauliflower
3/4 cup grated mozzarella
S&P to taste
Preheat the oven to 180 C (350F)
For the crust I grated the cauliflower in a food processor and then microwaved for 3-4 minutes. Once microwaved, mix in 1/2 of the mozzarella, oregano, S&P and beated egg.
On a prepared (oiled) baking sheet form a pizza crust to your desired thickness. Don’t make it super thin or it won’t hold up to come off the cookie sheet.Bake for 5-10 minutes until the base is firm. I have a fan assisted oven so mine only took 5 minutes and it was nice and golden around the edges.
Top with remaining mozzarella and any other desired toppings. Pop under the grill (broiler) until cheese is melted (approximately 1-2 minutes).
Instead of pizza sauce, I slow roasted cherry tomatoes and black garlic for about 20 minutes and topped the pizza with that.
Then I sprinkled everything with rocket (arugula) and a drizzle of rapeseed oil, some left over avocado and it was gorgeous!
Tonight I am putting my feet up and letting hubby make dinner. It looks like it’s squid with chorizo, roasted peppers, olives, manchego cheese, etc. Lovely meal for a summer’s evening watching the opening ceremony to the olympics!
