Fell off the wagon

After a rather stressful week, last week of full-on-ness I had to destress over the weekend, sleep loads, eat loads of fun things and generally spoil myself.

I am back on track now and have been cooking some lovely things that I will share this week.

Here is the start of the mix, looks gross right?

Ok. but I guarantee that they do taste nice and they are healthy. They are a great breakfast treat and they freeze well. I take them out of the freezer and they have thawed by the time I get into the office. They taste great topped with almond or cashew butter.

This is my adaption of Stuft Mama’s green goblin muffins.

 

Green Morning Muffins
Makes 18 muffins

2 cups fresh spinach (I used 2 large handfuls)
2/3 cup egg whites
1 whole egg
1/2 cup xylitol
1/4 cup unsweetened applesauce
1 T jersey black butter
2 T coconut oil (make sure it’s melted)
1 teaspoon vanilla
1/2 cup nonfat Greek yogurt
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon sea salt
2 cups of gluten free flour
3 bananas (mashed)
1/2 teaspoon cinnamon
1 T chia seeds
1 T maca powder

Directions:
Blend together spinach and eggs in a blender or food processor (I used a hand blender).

Transfer into large bowl and add all other ingredients and combine using a hand mixer until well mixed.

Pour in greased muffin pans (I used silicon muffin liners). Paper liners tend to stick to the muffins

Bake at 170 degrees Celsius (350 F) for 20 minutes.

London’s non-existent summer

So for the last 3 months we have had like 100 million years worth of rain. Landslides, flooding, you name it, we have had it! In the run up to the olympics I am hoping the weather changes so that A. we get some summer weather for a change and B. for the people that have to sit outside to watch the olympics.

London is a great city, there is usually loads going on and being eternally optimistic, they plan events that should mirror the season, but mother nature has a nasty habit of getting in the way.

I watched this every day on my way to the station in the evenings, even in the rain and cool weather they were out there every day!

Then I headed home, my route takes me right by the Olympic park.

As you can see, the weather is lovely at the moment 🙂 but hey, the park is nearly finished with only 1 week to go to “kick off”.

I am preparing my Foodie Penpal’s box as we speak to go out today. I have such a good time putting the boxes together, and I can’t wait to get my second box! The person who got me this time has similar eating habits and the lady who I got paired with sounds really cool and runs her own catering company, so the pressure is on! 🙂
