Whew what a week!

Wow what a long week. For the last 10 stress filled days straight I have been working 14 hour days minimum. I would give a kings ransom to be here, wherever that is!

It’s the kind of stress that after a while you are just exhausted all the time and find even eating a chore. I have simply grabbed whatever was easiest, and have only been out running a couple of times. It’s the kind of stress that means for the rest of the day, I will be watching the Shrek movies and eating popcorn and drinking pink wine for dinner. I have my grocery delivery coming tonight with only healthy stuff in it! Tomorrow I am going to kick stress to the curb and get my life back. This weekend there will be no laptop, no mobile, just fresh air and freedom!

This morning, I knew I had to eat but wasn’t really inspired and a bit rushed,  so I made my go to smoothie:

Green Monster Smoothie

200 ml coconut milk (I use really light Kara non dairy milk) or any other non dairy milk
1 frozen banana chopped
2 handfuls organic spinach
1 T chia seeds
1 scoop vanilla protein powder
1 t coconut oil

Whizz it all up, letting it sit for 5 minutes so the chia seeds soak a bit and then drink. Delish and filling, especially when you are hungry but don’t want to cook.

That filled me up nearly until lunch when I was feeling nibbly and decided to try a recipe that had been hanging around for ages that I had seen on Eating Bird Food’s blog.

Coconut Protein Balls (makes 4) based on the Eating’s recipe

2T vanilla protein powder (I used BSN Lean Dessert – Whipped Vanilla Cream) but you could use unflavoured and add in some vanilla
2 T hemp seeds
1 T chia seeds
2 T coconut manna
1/2 T maple agave
1/2 T water
1 tsp water
1/2 tsp cinnamon

 

I used my hand blender and whizzed everything up and then formed into 4 balls.

I had to eat one immediately, and MAN! was it delish! Wow, yummy! and the chia seeds gave a nice bite. This was the perfect sweet treat that you don’t have to feel guilty for eating!

Lunch rolled around inevitably and I was again rushed to eat quickly and healthy so I decided on veggie bean burgers.

 

Kidney Bean Burgers (makes 4 patties)

1  400g tin of kidney beans, drained and rinsed
1/4 onion, finely chopped
4 cloves black garlic (or 1 minced clove regular garlic)
1 heaped tsp smoked paprika
2 T ground flax

Lightly saute the onion and garlic and add to the remaining ingredients. Shape into 4 patties. Cook in 1 tsp coconut oil for several minutes on each side.

I served mine on a spinach salad with pickles. Delish!
