Chocolate chip cookies for one

Small batch cookie recipeNecessity is the mother of invention. There are times when I need cookies, and I need them now. I had one of those moments yesterday and immediately went in search of my go  to cookie recipe. I am trying to eat healthy at the moment, so I thought that a big batch of cookies in the house was probably not a good idea. I decided to amend my recipe to get a smaller batch of cookies. The first batch I tried in the microwave. Epic fail. It was really tasteless and disappointing and went straight in the trash.

Next I decided to try again and this time use the oven. Wow! In 8 -10 short minutes, you will have two amazingly tasty cookies. Hot, gooey, and totally satisfying. The recipe is flexible and is easily made into spice or ginger cookies, or you can make the dough and leave out all spices or chocolate and it is still a lovely cookie. I prefer my chocolate chip cookies with more dough than chocolate, however if you need more of a chocolate hit, add an extra tablespoon of chocolate chips. I am going to experiment with sugar cookies next.

Mix all ingredients together, bake for 8-10 minutes and you will be incredibly happy you did. The best part is that there are no leftovers unless you have better willpower than me and eat only 1 of the 2 cookies.

Now, the only decision to make once you have chosen your flavour of choice is, the end result. Do you like chewy softer cookies or crisper cookies? For softer, use baking parchment or a silicone  baking mat, for a crisper cookie, cook directly on the baking tray. Remember the cookies spread, so space them out on the tray so they keep their shape and don’t morph into one gigantic cookie. Wait, maybe that’s not a bad idea after all, and you can say you only ate 1 cookie. The choice of sugar is yours as well. For the chocolate chip cookies, I used 1 tablespoon of dark brown sugar and 1 tablespoon of vanilla caster sugar that I made myself. I love vanilla, and I usually have a batch of vanilla sugar in the house, so I used that but plain sugar or plain caster sugar is fine.

Chocolate chip cookies for 1 Recipe (makes 2)


  • 2 tablespoons of butter
  • 1 firmly packed tablespoon of dark brown sugar
  • 1 tablespoon of caster sugar
  • Pinch of sea salt
  • ¼ teaspoon of pure vanilla extract
  • 1 egg yolk
  • ¼ teaspoon of baking soda
  • ¼ cup of all-purpose flour
  • 2 heaped tablespoons of mini semisweet chocolate chips


  1. Preheat oven to 160C/350F degrees and line a baking sheet with baking paper for a softer cookie or without for a cookie that is a bit crisper.
  2. In a microwave safe bowl, heat butter until it has softened.
  3. Blend butter, sugars, salt, and vanilla together by hand.
  4. Add egg yolk and stir again.
  5. Add baking soda and flour and stir until combined.
  6. Stir in chocolate chips.
  7. Split cookie dough into two balls and place on baking sheet approximately 2 inches apart.
  8. Bake for about 8 minutes, or until cookies are golden brown.
  9. Leave to cool for a couple of minutes, then eat or after fully cooling on a cooling rack put in an airtight container for later.
